Same thing happened to a girl I installed Carplay on to her car for. Had to convert it from wired to Wireless Carplay for it to work again. Literally no explanation as to why it happened. My first thought was that her phone was fake but she assured me that her phone wasn't. So maybe it would be worth upgrading to wireless and see if that works.
